Fry the Fish:
Rub the fish with a bit of salt and turmeric.
Heat oil in a wok or deep pan and fry the fish until golden and crispy. Drain and set aside.
Prepare the 3-Flavour Sauce:
In a separate pan, heat a little oil and sauté the garlic, ginger, onion, and lemongrass until fragrant.
Add bird’s eye chilies, red and green chilies.
Stir in the pineapple and all the sauces (chili, tomato, and oyster sauce).
Add sugar, salt, and water. Let it simmer until slightly thickened.
Taste and adjust seasoning as needed.
Serve:
Pour the hot sauce generously over the fried fish.
Garnish with coriander or spring onions if desired.

Untuk ikan:
1 ekor ikan siakap (bersihkan, kelar dan perap sedikit garam & kunyit)
Minyak untuk menggoreng
Untuk sos 3 rasa:
3 ulas bawang putih (cincang)
1 biji bawang besar (hiris)
2 batang serai (diketuk)
1 inci halia (hiris halus)
1 batang cili merah & 1 batang cili hijau (hiris serong)
3–4 biji cili padi (ikut tahap pedas)
½ biji nenas (potong kecil) – optional tapi sedap!
2 sudu besar sos cili
2 sudu besar sos tomato
1 sudu besar sos tiram
1 sudu teh gula
Garam secukup rasa
Air (lebih kurang ½ cawan)
Daun ketumbar atau daun bawang untuk hiasan (optional)
Goreng Ikan:
Panaskan minyak dan goreng ikan siakap hingga garing keemasan. Angkat dan toskan.
Masak Sos 3 Rasa:
Panaskan sedikit minyak, tumis bawang putih, halia, bawang besar dan serai hingga wangi.
Masukkan cili padi, cili merah & hijau.
Masukkan nenas dan semua sos (cili, tomato, tiram), gaul rata.
Masukkan gula, garam, dan air. Masak hingga sedikit pekat.
Rasa dan sesuaikan rasa ikut suka.
Hidang:
Tuang sos panas-panas ke atas ikan goreng.
Hias dengan daun ketumbar atau daun bawang jika suka.
