500 grams of tuna (tongkol), cut into pieces
2 tbsp lime juice
Salt to taste
6 shallots
4 cloves garlic
4 candlenuts, roasted
1 thumb-sized piece of turmeric
1 thumb-sized piece of ginger
2 thumb-sized pieces of galangal
5 large red chilies
5–10 bird's eye chilies (adjust to taste)
2 bay leaves
3 kaffir lime leaves
1 stalk lemongrass, bruised
1 tsp ground coriander
1 tsp ground white pepper
Salt and sugar to taste
500 ml coconut milk (from ½ grated coconut or instant coconut milk)
Cooking oil for sautΓ©ing
Prepare the fish
Rub the tuna pieces with lime juice and a little salt. Let sit for 15 minutes, then rinse.
SautΓ© the spices
Heat oil, sautΓ© the ground spices along with bay leaves, kaffir lime leaves, and lemongrass until fragrant and cooked.
Cook the curry
Pour in the coconut milk, add coriander, pepper, salt, and sugar. Stir well and bring to a gentle boil.
Add the fish
Add the tuna pieces, reduce the heat, and simmer until the fish is fully cooked and the flavors are absorbed. Adjust seasoning to taste.
Serve
Serve the tuna curry hot with steamed rice.

Berikut resep gulai ikan tongkol khas Nusantara yang gurih, pedas, dan kaya rempah:
500 gram ikan tongkol, potong-potong sesuai selera
2 sdm air jeruk nipis
Garam secukupnya
6 siung bawang merah
4 siung bawang putih
4 butir kemiri, sangrai
1 ruas kunyit
1 ruas jahe
2 ruas lengkuas
5 buah cabai merah besar
5–10 cabai rawit (sesuai selera)
2 lembar daun salam
3 lembar daun jeruk
1 batang serai, memarkan
1 sdt ketumbar bubuk
1 sdt merica bubuk
Garam dan gula secukupnya
500 ml santan (bisa dari 1/2 butir kelapa atau santan instan)
Minyak untuk menumis
Siapkan ikan
Lumuri tongkol dengan air jeruk nipis dan sedikit garam, diamkan 15 menit, lalu bilas.
Tumis bumbu
Panaskan minyak, tumis bumbu halus bersama daun salam, daun jeruk, dan serai hingga harum dan matang.
Masak gulai
Tuang santan, masukkan bumbu pelengkap lainnya (ketumbar, merica, garam, gula). Aduk rata dan masak sampai santan mulai mendidih.
Masukkan ikan
Tambahkan potongan ikan tongkol, kecilkan api, dan masak hingga ikan matang dan bumbu meresap. Koreksi rasa.
Sajikan
Gulai ikan tongkol siap disajikan hangat dengan nasi putih.
